FRIED SCALLOP WITH XO SAUCE

INGREDIENTS
- Scallops 350 g / 12 oz
- Cantonese wonton wrappers 8 sheets
- Parsley for topping (optional)

SEASONING MIX
- Lee Kum Kee Premium Oyster Sauce 1 tbsp
- Lee Kum Kee XO Sauce 3 tbsp

INSTRUCTIONS
1. Deep-fry wonton wrappers in hot oil until golden yellow and crisp. Drain and put on a serving plate.

2. Blanch scallop in boiling water. Drain.

3. Pan-fry scallop in 2 tbsp oil until done. Add seasoning mix and stir well until heated through. Put scallop on fried wonton wrappers and sprinkle with parsley.
